Sweet potato and squash crumble with sweet spices

Crumbles are mostly known as desserts, but this one is savoury, and yet still sweet. The sweet potato and squash both provide sweetness, while the added The Laughing Cow® Professional Formula Plus ensures a smooth texture.

Ingredients

  • 1 kg frozen sweet potatoes
  • 850 g diced pumpkin
  • 4 g ras el hanout spices
  • 3 g salt
  • 2 g pepper
  • 170 g The Laughing Cow® Professional Formula Plus
  • 170 g
  • 170 g flour
  • 85 g semi-salted butter

Preparation

  1. Cook the sweet potatoes and squash in the steam oven at 90°C for 15 minutes.
  2. Grind the vegetables in a mill (to make a puree).
  3. Continue grinding while adding the spices, salt, pepper and The Laughing Cow® Professional until the texture is smooth.
  4. Use a beater to prepare the crumble dough by mixing the flour and butter. Allow to cool.
  5. Spread the puree in a gastronorm tray and sprinkle the crumble topping over the top.
  6. Grill in the oven for 10 minutes.
